Strawberry Cheesecake Donuts

 Ingredients:

For the Donuts:

  • 1 ½ cups (190g) all-purpose flour
  • ½ cup (100g) granulated sugar
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ½ cup (120ml) milk
  • ¼ cup (60g) unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup (75g) fresh strawberries, diced

For the Cheesecake Filling:

  • 4 oz (113g) cream cheese, softened
  • ¼ cup (30g) powdered sugar
  • ½ tsp vanilla extract

For the Strawberry Glaze:

  • ½ cup (75g) powdered sugar
  • 2 tbsp strawberry puree (blend fresh strawberries)
  • ½ tsp lemon juice

Instructions:

Step 1: Make the Donuts

  1. Preheat oven to 350°F (175°C). Grease a donut pan.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, mix milk, melted butter, egg, and vanilla extract.
  4. Combine wet and dry ingredients, stirring until just combined. Fold in diced strawberries.
  5. Fill the donut molds about ¾ full.
  6. Bake for 10-12 minutes or until golden brown and a toothpick comes out clean.
  7. Let them cool completely before filling.

Step 2: Make the Cheesecake Filling

  1. Beat the cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Transfer the filling into a piping bag with a small tip.

Step 3: Fill and Glaze the Donuts

  1. Using a straw or small knife, make a hole in each donut. Pipe in the cheesecake filling.
  2. In a bowl, whisk together powdered sugar, strawberry puree, and lemon juice for the glaze.
  3. Dip each donut in the glaze and let it set for a few minutes.
