Strawberry Cheesecake Donuts
Ingredients:
For the Donuts:
- 1 ½ cups (190g) all-purpose flour
- ½ cup (100g) granulated sugar
- 1 ½ tsp baking powder
- ½ tsp salt
- ½ cup (120ml) milk
- ¼ cup (60g) unsalted butter, melted
- 1 large egg
- 1 tsp vanilla extract
- ½ cup (75g) fresh strawberries, diced
For the Cheesecake Filling:
- 4 oz (113g) cream cheese, softened
- ¼ cup (30g) powdered sugar
- ½ tsp vanilla extract
For the Strawberry Glaze:
- ½ cup (75g) powdered sugar
- 2 tbsp strawberry puree (blend fresh strawberries)
- ½ tsp lemon juice
Instructions:
Step 1: Make the Donuts
- Preheat oven to 350°F (175°C). Grease a donut pan.
- In a bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, mix milk, melted butter, egg, and vanilla extract.
- Combine wet and dry ingredients, stirring until just combined. Fold in diced strawberries.
- Fill the donut molds about ¾ full.
- Bake for 10-12 minutes or until golden brown and a toothpick comes out clean.
- Let them cool completely before filling.
Step 2: Make the Cheesecake Filling
- Beat the cream cheese, powdered sugar, and vanilla extract until smooth.
- Transfer the filling into a piping bag with a small tip.
Step 3: Fill and Glaze the Donuts
- Using a straw or small knife, make a hole in each donut. Pipe in the cheesecake filling.
- In a bowl, whisk together powdered sugar, strawberry puree, and lemon juice for the glaze.
- Dip each donut in the glaze and let it set for a few minutes.
