Zaalouk (Moroccan Dip)
Zaalouk
Zaalouk is a delicious Moroccan dip made with roasted eggplant, tomatoes, garlic, and warm spices. It’s rich, smoky, and perfect as a side dish or dip with bread, pita, or couscous!
Ingredients:
- 1 large eggplant (about 300g), roasted & mashed
- 2 large tomatoes, finely chopped
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp paprika
- 1 tsp ground cumin
- ½ tsp salt (or to taste)
- ½ tsp black pepper
- ½ tsp chili flakes (optional, for heat)
- ½ tsp smoked paprika (optional, for extra depth)
- 2 tbsp fresh cilantro, chopped
- 2 tbsp fresh parsley, chopped
- 1 tbsp lemon juice
Instructions:
1️⃣ Roast the Eggplant
- Preheat oven to 400°F (200°C).
- Cut the eggplant in half, drizzle with olive oil, and roast face-down for 30-40 minutes until soft.
- Let it cool, then scoop out the flesh and mash it with a fork.
2️⃣ Cook the Base
- In a pan, heat olive oil over medium heat.
- Add garlic and sauté until fragrant (about 30 seconds).
- Stir in chopped tomatoes and cook for 10 minutes, until they break down into a thick sauce.
3️⃣ Combine & Simmer
- Add mashed eggplant, paprika, cumin, salt, black pepper, and chili flakes.
- Stir well and let it simmer for 10-15 minutes, stirring occasionally.
- Mix in chopped cilantro, parsley, and lemon juice.
4️⃣ Serve & Enjoy
- Drizzle with extra olive oil and serve warm or cold with crusty bread, pita, or couscous!
