Zaalouk (Moroccan Dip)

Zaalouk

Zaalouk is a delicious Moroccan dip made with roasted eggplant, tomatoes, garlic, and warm spices. It’s rich, smoky, and perfect as a side dish or dip with bread, pita, or couscous!


Ingredients:

  • 1 large eggplant (about 300g), roasted & mashed
  • 2 large tomatoes, finely chopped
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp ground cumin
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • ½ tsp chili flakes (optional, for heat)
  • ½ tsp smoked paprika (optional, for extra depth)
  • 2 tbsp fresh cilantro, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice

Instructions:

1️⃣ Roast the Eggplant

  • Preheat oven to 400°F (200°C).
  • Cut the eggplant in half, drizzle with olive oil, and roast face-down for 30-40 minutes until soft.
  • Let it cool, then scoop out the flesh and mash it with a fork.

2️⃣ Cook the Base

  • In a pan, heat olive oil over medium heat.
  • Add garlic and sauté until fragrant (about 30 seconds).
  • Stir in chopped tomatoes and cook for 10 minutes, until they break down into a thick sauce.

3️⃣ Combine & Simmer

  • Add mashed eggplant, paprika, cumin, salt, black pepper, and chili flakes.
  • Stir well and let it simmer for 10-15 minutes, stirring occasionally.
  • Mix in chopped cilantro, parsley, and lemon juice.

4️⃣ Serve & Enjoy

  • Drizzle with extra olive oil and serve warm or cold with crusty bread, pita, or couscous!
